Collection: The Chocolate Shop

The chocolate used on the Ashford Castle estate is Valrhona. We choose to partner with Valrhona, as we believe it is the best chocolate in the world. We share the same values and beliefs regarding quality, sourcing and sustainability.

We have created our own exclusive blend with Valrhona. ‘Legend’ By Ashford Castle. Our ‘Legend’ chocolate has been created with a 55% cocoa content, for a rich milk chocolate tasting experience. Led by the cocoa, the first taste offers slight fresh milk notes, followed by hints of sweet vanilla and biscuit, enhanced by floral and honey aromas. The chocolate has a strength that is not overpowering and lingers delicately.

The cocoa beans for our chocolate are sustainably sourced in keeping with Ashford Castle’s sustainability ethos. This ethos is led by Red Carnation Hotels’ parent company, The Travel Corporation (TTC) and its not-for-profit organisation, The TreadRight Foundation. The TreadRight Foundation is committed to progressing sustainable tourism, benefitting the people, places and wildlife impacted by tourism.

The ‘concept‘for the chocolate shards at Mrs Teas were created on afternoon in the pastry kitchen many years ago. Mrs Tollman sparked the idea and we followed through to create what we now call our signature collection range of shards.

They Include: Dark chocolate & candied pecan nut, Mandiant Shards, Milk chocolate, sesame & coconut and Mrs Tollman’s Favourite; Cornflake Milk Chocolate

To compliant our range we have created; ‘legend’ & Redbreast whiskey truffles and a Salted Dark chocolate fudge.
